Nothing tastes and smells more like Christmas than ginger-flavored cookies. These crisp snaps are dotted with chewy bits of candied ginger for a tasty twist on tradition.
Ingredients:
2 cups flour
1 teaspoon baking soda
1-2 teaspoons ground ginger, depending on your taste
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
½ cup butter
1 cup dark brown sugar
1 egg, beaten
¼ cup molasses
½ cup candied ginger, diced very small
Preheat oven to 375º F.
In a medium bowl sift together flour, baking soda, and spices. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed, about 2 minutes. Add the egg and molasses and mix until combined. Reduce mixer speed to low and add the dry ingredients and candied ginger, breaking up and separating the diced bits with your fingers.
Form dough into ¼-inch balls and place on a lightly greased baking sheet.
Bake
for 10-12 minutes.
