Consider making a double batch because these stuffed mushrooms disappear fast when presented to munchie-loving party guests. Makes 30 stuffed mushrooms.

Ingredients

  • 2 (10-ounce) packages white mushrooms
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • ½ cup silken tofu, crumbled
  • ½ cup pine nuts
  • 1/3 cup packed fresh basil leaves
  • 1 (6.5-ounce) jar sun-dried tomatoes packed in oil
  • Salt and freshly ground black pepper, to taste
